Crispy Pork Schnitzel
with Lemony Orzo & Zucchini
When you see that golden-crisped exterior, you know you’re in for a good schnitzel. This budget classic is elevated with Grana Padano in the crust, and accompanied by uplifting zucchini-studded pasta.

- 40g Panko
- 140g Orzo
- 25g Grana Padano (contains rennet)

Preparation
Mise en place
- Bring a medium pot of salted water to a boil.
- Grate the zucchini.
- Pat the pork dry.
- Halve the lemon; juice ½ and quarter the remaining ½.
Boil the orzo
- Add the orzo to the pot of boiling water and boil, 9 to 10 min., until just tender.
- Drain and rinse.
- Transfer to a bowl and toss with a drizzle of oil to prevent sticking.
Prepare the pork schnitzel
- Meanwhile, in a shallow bowl, beat 1 egg (double for 4 portions) until smooth; season with S&P.
- In a second shallow bowl, combine the panko, ½ the cheese and the spices.
- Working one at a time, coat the pork in the egg (shaking off any excess), then in the panko (pressing to adhere).
Cook the pork schnitzel
- In a large, high-sided pan, heat a thin layer of oil on medium-high.
- Add the pork schnitzel* and cook, 5 to 7 min. per side, until golden brown and cooked through (add more oil as needed to keep a thin layer at the bottom).
- Transfer to a paper towel-lined plate; season with S&P. Wipe out and reserve the pan.
Combine the orzo
- In the same pan, heat a drizzle of oil on medium.
- Add the zucchini and S&P. Cook, stirring occasionally, 4 to 5 min., until softened.
- Add the orzo, lemon juice and remaining cheese.
- Cook, stirring often, 1 to 2 min., until combined and heated through.
Plate your dish
- Divide the orzo between your plates.
- Top with the pork schnitzel.
- Garnish with the lemon wedges. Bon appétit!
*Health Canada recommends cooking pork to a minimum internal temperature of 71°C.
