Find your balance with a perfectly calibrated midweek meal. In this streamlined stir-fry, tamarind paste is all tart fruit, honey brings its slow sweetness and garlic provides an aromatic undertow. You’ll create equilibrium between the meat and veg, too. An ample helping of ground beef, sesame-spiced and pan-browned, joins tender-crisp broccoli florets and munchy edamame beans. Everything lands on a comforting base of jasmine rice infused with garlic for extra fragrant appeal.

  • 2 Garlic cloves
  • 150g Edamame (or green peas)
  • 160g Jasmine rice
  • 15ml Tamarind paste
  • 14g Honey
  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Preparation

Cook the rice
Mince the garlic. In a medium pot, heat a drizzle of oil on medium-high. Add ¾ of the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the rice, 1 ½ cups water (double for 4 portions) and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Cook the beef
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the beef*; season with ½ the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. Transfer to a plate and reserve the pan.

Sauté the vegetables
In the same pan, heat a drizzle of oil on medium-high. Add the broccoli (halve if large) and remaining spices. Sauté, 5 to 7 min., until beginning to brown. Add the edamame and 2 tbsp water (double for 4 portions). Sauté, 2 to 3 min., until the water has evaporated and the vegetables are tender; season with S&P.

Make the stir-fry
To the pan of vegetables, add the beef, honey, tamarind and remaining garlic. Cook, stirring frequently, 1 to 2 min., until combined.

Plate your dish
Divide the rice between your plates. Top with the stir-fry. Bon appétit!
