Protein Upgrade | Charred Char Siu ORGANIC Chicken Breasts
with BBQ Long Beans & Garlic Rice
Char siu, savoury-sweet Chinese BBQ pork, works like a charm with chicken too—certified organic, so it’s better for you and the environment. Preparing it on your backyard grill is easy with a recognizably tangy-sweet marinade (there’s a touch of hoisin in there). Showcase a distinctive Asian vegetable in grilled long beans, and serve the works with a warm mound of garlic-scented rice.

- 2 Organic chicken breasts (raised without antibiotics by Canadian farmers)
- 15ml Minced garlic
- 340g Long beans
- 45ml Rice vinegar
- 160g White rice
- 30ml BBQ sauce
- 30ml Hoisin sauce
- 10g Sugared Sesame spices (sea salt, brown sugar, white sesame seeds, garlic, sunflower oil, ginger, black pepper, sugar)

Preparation

Cook the rice
In a medium pot, heat a drizzle of oil on medium-high. Add ½ the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the rice, 1 ¼ cups water (double for 4 portions), ⅓ of the spices and a pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Mise en place
Meanwhile, heat the BBQ on high, making sure to oil the grill first. Remove the stem ends of the long beans (halve crosswise if long). In a medium bowl, combine the long beans, a drizzle of oil, ½ the remaining spices and S&P. In a small bowl, make the sauce by combining the hoisin, BBQ sauce, vinegar, remaining garlic and S&P.

Grill the chicken
Pat the chicken dry with paper towel. In a second medium bowl, combine the chicken*, ½ the sauce, a drizzle of oil, the remaining spices and S&P. Add to the BBQ and grill, brushing with the remaining sauce often, 6 to 8 min. per side, until cooked through.

Grill the long beans
- Meanwhile, add the long beans to the BBQ and grill, turning often, 3 to 4 min., until beginning to blister.

Plate your dish
Divide the rice between your plates. Top with the chicken and long beans. Bon appétit!
