Protein Swap | Hickory-Bourbon Chicken Breasts
with Crisp Fennel & Apple Salad
Dusted with smoky-sweet spices, and basted with BBQ sauce, chicken breasts are headed straight to flavour city—very possibly New Orleans. For a sensational paleo contrast, we’re lining it up with a lemony salad that's all kinds of crisp with fennel, apples, radishes and nutritious pepita seeds.

- 2 Canadian-raised chicken breasts (air chilled)
- 1 Lemon
- 1 Diced apples
- 200g French radishes
- 1 Fennel bulb
- 25g Roasted pepitas (pumpkin seeds)
- 30ml Organic BBQ sauce (no added sugar)
- 10g BBQ on Bourbon Street spices (salt, bourbon flavour, paprika, chili powder, onion, garlic, black pepper, mustard, cumin, smoked hickory flavour)

Medium oven-safe pan

Preparation

Start the pork
- Preheat the oven to 450°F.
- Pat the pork dry; season with the spices and S&P.
- In a medium, oven-safe pan, heat a generous drizzle of oil on medium.
- Add the pork and cook, turning occasionally, 4 to 6 min., until seared.

Finish the pork
- Brush the pork* with ½ the BBQ sauce.
- Transfer to the oven and roast, turning and brushing with the remaining BBQ sauce halfway, 8 to 12 min., until cooked through.
- Transfer to a cutting board and let rest before slicing.

Mise en place
- Meanwhile, juice the lemon.
- Thinly slice the radishes.
- Halve and core the fennel bulb lengthwise; thinly slice crosswise.

Make the salad & serve
- In a large bowl, combine the lemon juice (start with ½), 2 tbsp oil (double for 4 portions) and S&P.
- Add the fennel, apples, radishes and pepitas; toss well.
- Divide the pork and salad between your plates. Bon appétit!
