Protein Boost | Orecchiette Rosée with Chorizo
Roasted Broccoli
Power up on proteins! Add chorizo to your meal with our Protein Boost option. Kids know that when you mix red and white, you get pink. Rosée sauce coats orecchiette pasta—little ears, in Italian—to perfection with a blend of tomato and cream. The picture is completed with roasted broccoli and a garnish of Grana Padano.

- 30ml Vegetable demi-glace
- 200ml Tomato sauce
- 340g Orecchiette
- 25g Grana Padano (contains rennet)
- 90ml Heavy cream
- 250g Canadian-raised ground chorizo pork sausage meat
- 20g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Preparation

Roast the broccoli
- Preheat the oven to 450°F. Bring a large pot of salted water to a boil.
- On a lined sheet pan, toss the broccoli (halve if large) with a drizzle of oil, ½ the spices and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender.

Boil the pasta
- Add the pasta to the pot of boiling water; stir gently to separate.
- Boil, 9 to 11 min., until al dente.
- Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
- Reserve the pot.

Mise en place
- Meanwhile, mince the garlic.

Make the sauce
- In the reserved pot, heat a drizzle of oil on medium-high.
- Add the garlic and sauté, 1 to 2 min., until fragrant; season with the remaining spices and S&P.
- Add the tomato sauce, demi-glace, cream, ½ the reserved cooking water and S&P.
- Simmer, 3 to 4 min., until thickened.

Combine the pasta & serve
- To the pot, add the pasta and ½ the cheese.
- Cook, stirring often, 2 to 3 min., until the pasta is coated and combined.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
- Divide the pasta between your bowls.
- Top with the broccoli.
- Garnish with the remaining cheese. Bon appétit!
