Warm and hearty, cool and crisp, this ssam-style meal has all the autumn feels. Lettuce leaves are the receptacles for a meat-free mix deeply flavoured with sesame and hoisin sauce. Each one holds crumbled Impossible™ beef and munchy Asian-inspired vegetables.

  • 150g Shimeji mushrooms
  • 2 Impossible™ beef burger patties (made from plants)
  • 15ml Toasted sesame oil
  • 30ml Hoisin sauce
  • 30ml Vegetable demi-glace
  • 150g Edamame (or green peas)
  • 160g Jasmine rice
  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, sunflower oil, paprika oleoresin, ginger, black pepper)

Preparation

Cook the rice

  • In a medium pot, combine the rice, 1 ½ cups water (double for 4 portions), ½ the spices and a pinch of salt; bring to a boil.

  • Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.

  • Remove from the heat, add ½ the sesame oil, and let sit, covered, for 5 min. Fluff the rice.

  • Meanwhile, separate the lettuce leaves.

  • Remove the bottom of the mushrooms; separate the mushrooms.

  • Crumble the patties.

Start the filling

  • In a large pan, heat the remaining sesame oil and a drizzle of oil on medium-high.

  • Add the mushrooms and remaining spices. Sauté, 2 to 3 min., until beginning to brown.

  • Add the crumbled patties and edamame. Cook, stirring often, 3 to 5 min., until beginning to brown.

Finish the filling

  • To the pan, add the hoisin, demi-glace and ½ cup water (double for 4 portions).

  • Cook, stirring often, 2 to 3 min., until the crumbled patties are coated.

Plate your dish

  • Divide the lettuce leaves and ½ the rice between your plates.

  • Top the lettuce leaves with the remaining rice and the filling. Bon appétit!
