Ground Beef & Squash Hummus Mezze
with Fattoush-Inspired Watermelon Radish Slaw
Middle Eastern mezze is an invitation to graze. Pick up a forkful of delicious sumac-spiced ground beef and cubed butternut squash, swooping through hummus. Mosey over to a crisp slaw dressed with pomegranate molasses, and let your fingers do the walking to warm pita.

- 250g Canadian-raised lean ground beef
- 150g Shredded cabbage
- 200g Diced butternut squash
- 1 Watermelon radish
- 60g Hummus
- 15ml Pomegranate molasses
- 30ml Apple cider vinegar
- 2 Pita
- 10g Sumac & Garlic spices (dried vegetables, salt, spices, mustard, sugar, sunflower oil, lemon oil, sumac, garlic)

Preparation

Cook the beef & squash
- In a large pan, heat a drizzle of oil on medium-high.
- Add the squash and beef*; season with ⅔ of the spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.
- Add ½ the vinegar, ½ the pomegranate molasses, ¼ cup water (double for 4 portions) and S&P.
- Cook, stirring often, scraping up any browned bits, 2 to 3 min., until the beef and squash are coated.

Mise en place
- Meanwhile, peel and quarter the watermelon radish; thinly slice crosswise.

Make the slaw
- In a large bowl, combine the remaining vinegar, pomegranate molasses and spices, 1 tbsp oil (double for 4 portions) and S&P.
- Add the watermelon radish and cabbage; toss well.

Warm the pita
- Wrap the pita in a slightly dampened paper towel.
- On a plate, microwave, in 10 sec. increments, until warm.
- Transfer to a cutting board and cut into wedges.

Plate your dish
- Divide the hummus between your plates and spread out in a circular motion.
- Top with the beef, squash and slaw.
- Serve the pita on the side. Bon appétit!
