French Onion Wagyu Cheeseburgers
with Balsamic Onions & Crunchy Fennel Salad
There’s no beef better than wagyu when it comes to mouth-watering burgers. Perfectly marbled, perfectly tender and perfectly seared, the patties are draped in melted cheese and warm caramelized onions tinged with balsamic. A finely sliced fennel side salad keeps with the theme.

- 2 Grass-fed wagyu beef patties (raised without antibiotics)
- 120g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 1 Fennel bulb
- 60ml Rich, Snappy Whipped Balsamic vinaigrette
- 50g Caramelized onions
- 25g Sunflower seeds
- 2 Swiss cheese slices
- 2 Pretzel buns

Preparation

Cook the patties
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, 2 to 3 min. per side, until cooked through; season with S&P.
- Top with the cheese. Cover and cook, 1 to 2 min., until melted.
- Transfer to a plate, leaving any browned bits in the pan. Reserve the pan.

Make the salad
- Meanwhile, halve and core the fennel bulb lengthwise; thinly slice crosswise.
- In a large bowl, combine the baby greens, fennel, sunflower seeds, all but 1 tbsp of the vinaigrette (double for 4 portions) and S&P.

Make the balsamic onions
- In the reserved pan, heat a drizzle of oil on medium-high.
- Add the onions and sauté, 1 to 2 min., until warmed through.
- Add the remaining vinaigrette, 1 tbsp water (double for 4 portions) and S&P.
- Cook, scraping up any browned bits, 1 to 2 min., until the onions are coated.

Toast the buns & serve
- Warm the buns in the toaster.
- Divide the bun bottoms and ⅔ of the salad between your plates.
- Top each bun bottom with a patty, the balsamic onions, remaining salad and a bun top. Bon appétit!
