Turn nacho night on its head. They’ll be digging in deep when this Mexican-inspired skillet supper hits the table. Every bite breaks through layers of melty-welty white cheddar cheese, let loose over bountiful browned ground beef and morsels of softened sweet pepper. Meanwhile, with a quick flick of oil and spices, tortilla wedges will crisp in the oven for almost-instant homemade chips. Complete the ritual with a simple salsa of freshly chopped tomatoes.

Preparation

Start the skillet
Preheat the oven to 450°F. Halve, core and medium-dice the sweet pepper. In a large, high-sided, oven-safe pan, heat a drizzle of oil on medium-high. Add the beef*, sweet pepper and onions; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Make the tortilla chips
Meanwhile, stack the tortillas and cut into 8 wedges. On a lined sheet pan (use 2 sheet pans if necessary), toss with a drizzle of oil and the remaining spices. Bake, flipping halfway, 4 to 6 min., until crispy.

Make the tomato salsa
Meanwhile, medium-dice the tomatoes. In a medium bowl, combine the tomatoes, vinegar and S&P.

Finish the skillet
When the tortilla chips are crispy, remove from the oven and switch the oven to broil. Top the skillet with the cheese. Transfer to the oven and broil, 1 to 2 min., until the cheese has melted.

Plate your dish
Divide the skillet, tortilla chips and tomato salsa between your plates. Bon appétit!
